What Is Pancetta?

Pancetta is pork belly that has been salted, seasoned—often with black pepper and spices—and air-dried. It may be left flat or rolled into a tight cylinder. Because it is not smoked, its flavor comes from the pork and the seasoning rather than from smoke.

What Cut Is Pancetta Made From?

Pancetta is made from pork belly, the same layered cut used for bacon. The alternating bands of meat and fat are essential to its texture and flavor.

Pancetta vs Bacon

The key difference is smoke. Bacon is usually smoked, while pancetta is cured and dried without smoking. This makes pancetta milder and more purely porky, which is why it is often chosen when a recipe should not taste smoky.

How Pancetta Is Traditionally Used

Pancetta is commonly diced and rendered to start sauces, soups, and braises, or sliced thin as part of an antipasto. It adds savory depth to pasta dishes, greens, and roasted vegetables.
